The eggs will keep well overnight in a container.

Instructions
  1. Combine eggs, egg whites and water/milk in a microwave safe bowl.
  2. Whisk for 15-20 seconds.
  3. Microwave eggs for 2 minutes on high and stir again.
  4. Return to microwave for another 1 minute or until eggs are cooked through (time may vary depending on microwave power).
  5. Stir one last time and serve with bagels, hash browns, toast, veggies or in a wrap.

Tips!
Depending on your nutritional goals, you can in change the amounts of eggs and egg whites used.
Once eggs are cooked, we like to mix in 1/4 cup of salsa and top it with cottage cheese.
